Abstract:
This article explores the ambivalence of the concept of "civic-minded gastronome" by examining its two levels of understanding: restricted and broad. In the restricted sense, the gastronome is often associated with the customer of high-end restaurants, while in the broad sense, he or she is perceived as an agent who integrates ethical and moral considerations into his or her food choices. The article proposes to challenge these contrasting perspectives, and to highlight the levers that could be used to encourage gastronomic consumers to take sustainability into account through actors such as public authorities, producers and gastronomic mediators. Ultimately, the aim is to question the possibility of genuine gastronomic civic-mind, and to determine how it can be implemented in a meaningful way.
