Abstract: Once central to the French people's food supply until the advent of large-scale retail, the market now plays a more peripheral role. This research aims to characterise its ‘sustainability'. A comparison of the idealised vision of the market with its reality highlights three tensions underpinning the ‘DNA model' (Soul-Distance-Naturalness), a strategic and managerial tool designed for private and public sector stakeholders responsible for organising markets.
