Abstract: Solar dehydrator devices use hot air flow to extract water from products. In this study, we analyze the performance of a solar dehydration prototype. This prototype is ideal for areas with high solar irradiation. To determine the efficiency of the solar dehydrator prototype, we compared its performance with statistical data from other dehydrator projects. We performed tests during October and November 2016. Performance tests consisted of dehydration of fruits, meat and vegetables to collect drying parameters, average temperature and temperature differences. Results showed outstanding results in internal and external temperature, initial and final humidity and dehydration times. With the solar dehydration prototype, we were able to obtain temperatures above 70° C, which is similar to other dehydrators. We achieved satisfactory results during the process of drying of fruits, meat or vegetables with the prototype of solar dehydration
