L’assetto strutturale e le performance dei caseifici del settore del Parmigiano Reggiano: una valutazione microeconomica

Abstract: The paper assesses the technical and economic efficiency of the dairy structures of the Parmigiano Reggiano cheese production chain, analysing microeconomic and technological data of firms. Two datasets are used: the first one is the AIDA archive, that collects the financial statements of enterprises; the second one is based on data of a direct investigation of a sample of companies and collects data on the technology of the firms. The paper shows that the economic performance of the enterprises is weakly affected by a presence of economies of scale. Instead, the economic success is influenced by the coordination and the integration of the agents in the supply chain. Crucial is the role of the cooperative enterprises and of the cooperation institutions which provide coordination, services, and common rules in the definition of the quality standards and in the distribution of the value added among the different agents. The last aspects pay a crucial role in the economic performance of the entire industry.
