Abstract:
Abstract In the closing years of the twentieth century, Europe witnessed a series of disturbing food-related crises. They encompassed cases of deliberate and illicit adulteration, contamination with noxious chemicals from industrial effluents and the involvement of animal diseases, including bacterial and viral infections, and bovine spongiform encephalopathy (‘mad cow disease’). In some countries, this generated growing scepticism about information, particularly assurances about food safety, deriving from industry as well as from governmental and other official sources. These food problems were the precursors of the genetically modified (GM) food debate which remains partly unresolved to this day.
