Abstract: The aim of this work is to analyze if between 2000 and 2010 there was the expansion and territorialization of the sugar cane cultivation among all other cultivations, such as soya, corn, beans, rice, in Goiás with the attention turned to the food production based on oficial data. Some experts have highlighed, even if incipient, about the tendency of the new format of the Goiano local and regional agricultural space triggered by the territorialization and deterritorialization processes, led by the sugarcane capital. The methodology adopted in this work was the data collection through bibliographic and documental research, and data from government agencies, Ministry of Agriculture, Livestock and Supplies, the Brazilian Institute of Geography and Statistics, and the Sugar Cane Industry Union. The result of the work proves that in the last years, there has been the deterritorialization and the replacement of cultivation turned to food production, by the sugarcane cultivation, once that this last one pays the invested capital, via lease, above the market average compared to the others. However, such process may compromise the food domination, with the shortage of these products and also the productive chain, like is the case of swine and aviculture, and others.
