The Andalusian olive oil sector with differentiated quality

Abstract: [EN] Andalusia is the origin of 69.54 % of the olive oil with Protected Designation of Origin (EVOO-DOP) obtained in Spain in 2021. The value per kilogram of this vegetable fat with differentiated quality presents, however, a high dispersion depending on the geographical location of the territory in which it is produced. Using the QCA methodology, this document analyzes how the age of the PDO, the orientation of its production towards international markets or the predominance of cooperative entities among the companies registered in it can condition the value at origin of the product. [ES] Andalucía es origen del 69,54 % del aceite de oliva con calidad diferenciada por una Denominación de Origen Protegida (AOVE-DOP) obtenido en España en 2021. El valor por kilogramo de esta grasa vegetal presenta, sin embargo, una elevada dispersión en función de la localización geográfica del territorio en el que se obtiene. Empleando la metodología QCA, en este documento se analiza cómo la antigüedad de la DOP, la orientación de su producción hacia los mercados internacionales o el predominio de entidades cooperativas entre las empresas inscritas en la misma puede condicionar el valor en origen del producto.
