Abstract: During the last decades, consumption of fresh vegetables has declined while consumption of processed vegetables has increased. This paper aims at characterizing the purchases of processed vegetables in France by carrying out a principal component analysis of consumption data from the Kantar Worldpanel 2007 data. Older and more affluent households buy relatively more fresh produce and, when they buy processed vegetables, tend to choose the least processed forms. However the same product (namely minimally processed raw vegetables) are bought and used differently according to the age of the respondent. Finally, respondents less than 40 years old buy different combinations of products depending on their education, occupation and household structure while the most relevant characteristic of those over the age of 60 is income.
