Potential Risks and Benefits of Food Irradiation: A Review of the Literature

Abstract: This Research Update discusses a USDA/CSREES Food Safety Research Initiative grant awarded to Tennessee State University. The research will build a collaborative network of institutions (private and public) to conduct research on effective strategies for communicating potential risks and benefits of food irradiation to high-risk consumers: the young, the old, and consumers with compromised immune systems. Extensive and comprehensive review of the literature on the risks and benefits of food irradiation continue as part of this research project.
