Abstract: At the end of 1990?s, a certain failure of the French foodborn risk management had been observed, that could be explained partly by the fact that decision makers didn?t anticipate the consumers reactions accurately. A better comprehension of these behaviours towards risks constitutes a major stake in the success of the management of these foodborn risks. This article proposes a specific explanation via a model on the endogenous information and on the decision-making lock-in.
