Abstract: The article is devoted to test the authors’ approach to highlight, identify and use the marketing potential of consumer flows as a systemic factor to optimize the activity format of a modern catering enterprise and to increase its efficiency. The authors’ concept of stream marketing interaction is a branch marketing development aimed at increasing the sustainability of the operating activities of catering enterprises based on the mobilization of marketing potential.
