Abstract:
Indonesia is well-known for its tuna production. To enrich its tuna processes and expand it to export markets, it is important for tuna industry players in Indonesia to have an assessment system for their processes. The study aims to develop guidelines for export quality frozen tuna for Indonesia tuna players. Data collection was done in Nizam Zachman Oceanic Fishing Port, one of the biggest ports in Indonesia. Critical activities in each of four key areas (catching, transporting, storing and processing) were identified by open questionnaires to tuna experts. The collected data was then cleansed and grouped as critical activities, and used as fuzzy input variables into a fuzzy expert system. The model was validated using analytical hierarchy process (AHP). The proposed FES model was then used as assessment tool for Indonesia tuna industry players in evaluating their processes to establish whether they are ready to serve export markets.
