Abstract: Being the major vehicle of all activities of public administration in territorial-administrative units, local autonomy ensures a high degree of democracy in local community management. But, although this autonomy involves their participation in meeting their own interests, it is limited by the fact that local autonomy does not mean the right of communities to govern themselves in any matter. Therefore, a proper understanding of this principle is necessary, especially from a practical point of view, in order not to assign an absolute character to the local autonomy and to avoid stressing it. This paper highlights the hazards of food industrialization in the nutritionism era and analises the paradoxes which were appeared in the diet of the modern consumer at the confluence between food science and food industry.
