Creating ethical choices for coffee consumption from farm to cup and beyond

Abstract:
Coffee consumption is a global phenomenon, but one which is intricately linked to a wide range of stakeholders across complex coffee supply chains. Consumers have an important role in shaping change in the coffee industry, driving demand for higher quality coffee, supporting coffee producers that are considered to be more sustainable through certifications or other models such as direct trade, and through considerations of the waste they produce. This chapter explores the concept of sustainable coffee and how consumers have the option to make sustainable choices through their coffee consumption both in and out of the home. To do so it provides an overview of the coffee industry and how it operates before highlighting key threats to its future sustainability. It explores the threats to the industry, efforts to improve its sustainability, and the importance of consumer action in supporting a sustainable future for the coffee industry.
