Abstract: Abstract Have you been to a conveyor belt sushi restaurant? It is a popular sushi restaurant where you can enjoy your favorite sushi as it rotates on a conveyor belt. Conveyor belt sushi restaurants must continually generate new ideas to overcome high competition in the foodservice industry. Therefore, they are committed to collecting the data and information needed to generate ideas for new dishes and services, in addition to inventory management and demand forecasting, etc. As an introduction to this book, this chapter outlines the collection and utilization of data using a conveyor belt sushi restaurant as an example.
