Abstract:
Abstract While the global pandemic has starkly highlighted many fragilities in our current systems, it also has created the catalyst for an evolution of behaviors, systems and processes in the food and beverage industry that will be key not only in the innovation of businesses, but also in reducing their risk and increasing their resilience. A shift in consumer behavior, values and needs along with businesses’ need to remain competitive and resilient has created a series of macro trends that will be key for the growth of businesses. The macro trends include the need for transparency, from an end-to-end perspective in order to appease an ever-demanding consumer and in order to understand risk points in supply chains; an evolved need for sustainability that expresses itself as purpose-driven consumption that has an impact no longer just on the environment, but also individual health and social impact; authenticity, in terms of rediscovering and desiring authentic products or experiences that are expressed as local excellence, craftsmanship and quality; and lastly, digitalization in the form of creating new consumer experiences and/or optimizing productions processes.
