Abstract: Abstract Food markets have changed significantly in recent years. This applies to both the production side and the demand side. While the markets have become more volatile, they have also remained surprisingly stable over the longer term. The question of the extent to which food speculation is responsible for the fluctuations in food prices is controversial.
