Abstract: Tobit analysis was used to identify factors influencing the value consumers place on beef steaks in a vacuum skin package relative to steaks in an overwrapped styrofoam tray. Experimental economics was used to obtain value information. Results suggest that information regarding the vacuum skin package enhances the value of beef.
