Abstract: La avicultura conformada por las actividades de producción de huevos y carnes de aves, en Colombia ha tenido un crecimiento constante desde mediados del siglo XX, resultado del fortalecimiento institucional, organizacional y tecnológico. Las instituciones se encargaron de capacitar, controlar y financiar a empresarios, técnicos, granjeros e inversionistas para el montaje de granjas avícolas comerciales. Las empresas con su agremiación promueven el crecimiento, competitividad y sostenibilidad, mediante acompanamientos tecnológicos, sanitarios, de inocuidad, capacitación e investigación. La introducción de tecnologías en genética e instalaciones lograron el incremento de la producción de manera eficiente y rentable, lo que permitió la masificación del consumo de huevo y pollo que hoy son unas de las principales fuentes de proteínas para los colombianos.******ABSTRACT: Poultry is one of the economic activities which is based on the production of eggs and birds‘ meat. In Colombia this activity has shown a steady growth since the mid-twentieth century, mostly because of its institutional and technological organization. The institutions related to this activity has been in charge of the training of the human capital and the economic support, not only of technicians, and farmers but also of entrepreneurs and investors during the process of installation and startup of the industrial poultry farms. The partnership between these companies has promoted not only the economic growth, the competitiveness and the technological changes but also the use of good practices in sanitation, training and research. All this have turned out into a new and genetically improved production, contributing to a more efficient and profitable business. All this in turn has achieved the mass consumption of two of the main protein sources, eggs and chicken.
