Une brève histoire de l'industrie alimentaire
Jean-Louis Rastoin
Économie rurale, 2000, vol. 255-256
Abstract:
A short economic story of french food industry - This paper presents an historical picture of the French agro-food dynamics in the second part of the XX th century. After emphasizing the remarkable economic expansion in this sector (specially the contribution to the balance of trade and to direct or inferred employment), the author listed the different scientific publications on this subject. He pointed out that we passed from an « agricolo-centrée» approach to a «strategic» vision. A prospective analysis indicates that the agrofood industry will have to face 3 challenges in the forthcoming years: like new forms of competition (by concentration, innovation, and quality), value-creation for the partners of the firm (shareholders, wage-earners, suppliers and customers) and governance (towards a loss of autonomy for small firms ?).
