Contract Use and Contract Terms in Organic Markets

Abstract: This paper investigates the use of procurement methods and contracting terms in markets for organic products, where contracting is more prevalent than in the conventional commodity sector. Findings largely support transaction cost arguments for chosen procurement methods and contracting terms. Further, contracting is decreasing in general, while the use of longer-duration contracts and cost-plus pricing is increasing, which may reflect learning, development of relationships, and reputation.
