Abstract:
Food choices need to move towards more healthy and sustainable choices and nudging tools have much promise in helping in this process. However, in order to realize their full potential, they need to be used based on an understanding of the different ways in which people make food choices and taking into account that food products are frequently bought and a move towards more sustainability therefore requires the unlearning of old and the learning of new habits. This requires a better understanding of what happens after the choice- the evaluation of the product made during meal preparation and consumption, and the consequences this has for future choice. It also requires that interventions to change food choice are adapted to the different degrees of conscious reasoning that characterize food choices. Taking both a time perspective and the role of involvement into account, we develop a conceptual model that can guide the design, execution and analysis of interventions to change food choices and derive implications for future research and for the green transition in the food sector.
